Australia

Sorry for the delay with my writing this post, I had to write 2 papers for university 1 on analysing my diet on 1 on nutrition for an elderly Chinese lady who has a budget of $77 Hong Kong dollars a day. (Which I don't think is going to be my target market when I finish my course, as she probably can't speak english) With out any further delay my post on Australia. I spent christmas holidays in Adelaide and Beachport in South Australia.


This was my second trip to Adelaide I have been once before when I sailed from Melbourne to Adelaide and did a race from Adelaide to Port Lincoln. When I did the race from Adelaide to Port Lincoln every talked about how good the cray's were and how many there were in Port Lincoln, but I never actually got to try one so this trip I was determined to have at least 1! We spent my birthday and Christmas in Adelaide then headed down to Beachport, which is a 4 hours from Adelaide. We rented a house with a group of friends, and I had my first try at pulling pots to catch crayfish!  I now understand why they are so expensive to buy, they are difficult to catch!  First you need the boat, then the cray pots, then the bait and you need to wake up really really early to pull them out and re-bait them each day! At the beginning of the trip we had grand plans of having catch, kill and cook competition where you catch some food kill it and then cook it and the person with the best tasting recipe wins. (But in the end it didn't happen, not enough catching) We did end up catching a few cray's but not enough to have a competition.

We had amazing food while we were in Beachport, one of the guys brought down the best lamb chops and homemade rosemary and lamb sausages from his family farm! (I wish I had some photos but they were devoured so quickly) We did lots of fishing, cooking, and spent a lot of time on a very difficult puzzle. Beachport was a bit cooler then I expected, so we didn't spend as much time at the beach as I would have liked to. (I had to buy the lovely beenie and hoddie I am wearing in the photo above) It was great trip and here are a few recipes from my trip, hope you enjoy.

Barbecued cray tails with garlic
1 freshly caught cray's
2 cloves of garlic, minced
1/2 teaspoon lemon pepper
2 Tablespoons butter

1. Pull off cray tails, and cut them down the middle, wash and remove guts.
2. Put tails on foil with flesh side up, and put minced garlic, lemon pepper and dollop butter on top.
3. Wrap with foil and barbecue.

Barbecued cray tails with lime and onion
(this is my version of a Thai style cray, but really didn't have the right ingredients available so its more of a limy chilli style)
1 freshly caught cray's
2 cloves of garlic, minced
zest of 1 lime
juice of 1 lime
2 Tablespoons olive oil
1 teaspoon chilli flakes or 1 fresh chilli


1. Pull off cray tails, and cut them down the middle, wash and remove guts.
2. Put tail on foil with flesh side up put minced garlic, lime zest, chilli, lime juice and olive on top.
3. Wrap with foil and barbecue.
veggie, ham & haloumi salad with toast
Veggie, ham & haloumi salad
1/4 red onion
1/2 english cucumber
2 tomatoes
1 avocado
Ham
Haloumi cheese
2 Tbsp. olive oil
Juice of 1 lime
Chilli flakes
Sea salt
Freshly ground black pepper

1. Chop onions, cucumber, tomatos and mix together.
2. Chop cooked ham and haloumi cheese, and sauté until haloumi in golden colour.
3. Mix ham with haloumi with cucumber, tomatoes onions and mix.
4. Cut avocado in half remove pit and slice grid pattern and scoop out, gently mix with above.
5. Pour olive oil, lime juice over salad and season with chilli, salt and pepper.
6. Toast bread and scoop salad over bread and enjoy.
